1. Apple croissants

Healthy croissants

Who can resist the enticing flavour combination of apple and cinnamon? That’s why we have crafted this simple croissant breakfast that everyone in the family will love. It will take you less than 5-minutes to prepare, and you can also add them into your snack box for an afternoon treat.

Serves: 1

Ingredients

    • 1 apple
    • 1 roll of puff pastry
    • 3 tsp of cinnamon
    • 3 tsp sugar

Method

    1. Slice a sheet of puff pastry into 20 thin strips and then cut your apple in half down the centre. To remove the core, core out the centre with a spoon or carefully with a knife. Then slice your apples into thinner wedges.
    2. Wrap your apple wedges with the puff pastry, you will need around 2 strips per apple ring. Once wrapped, you can brush it with your whisked egg.
    3. Sprinkle the pastry with cinnamon and sugar and pop in the oven for 10 minutes to cook, or until golden brown.
    4. Add them to your Citron Tritan lunch box or snack box, alongside a piece of fruit.

2. Banana waffles

Banana waffles

If you’re looking for a slightly healthier alternative to a waffle, did you know you can make it with banana and oats? Packed with wholesome ingredients, it’s a delicious way to start your day on the right note. P.s. if you don't have a waffle machine, you can cook the mixture like pancakes instead.

Serves: 2

Ingredients

    • 1 banana
    • 45g in oats
    • 60g plain flour
    • ½  tsp baking powder
    • 118ml of plant-based milk
    • ¼ tsp cinnamon
    • 1 egg
    • ¼ tsp vanilla extract
    • Toppings of your choice e.g. banana, strawberries, Nutella etc

Method

    1. Add all of your ingredients into your blender or food processor and blend until the mixture is smooth.
    2. Heat your waffle plan and add 1/4 of the mixture to the machine and cook according to the waffle maker’s instructions.
    3. The waffles should be light golden brown, and should only take a couple of minutes to cook.
    4. Leave it to cool and then add your favourite toppings. We love adding banana slices and a squeeze of honey or Nutella. Add the waffles or pancakes to one of our lunch boxes and enjoy on the go.
    5. The batter can be stored in the fridge for a few days, so you can make them as and when you please.

3. Breakfast snack box

If you just don’t know what you fancy for breakfast, and you have a number of things that need eating in the fridge and cupboard, why not make a breakfast snack box? Here we have made a fruity breakfast with small triangles of eggy bread.

Serves: 1

Ingredients

    • A handful of strawberries
    • ½ banana
    • 1 tbsp peanut butter
    • 1 medium egg
    • ½ tbsp milk
    • 1 slice of bread
    • ½ tbsp butter

Method

    1. Cut your fruit up and add to one section of your Citron snack box. You can add a tablespoon of peanut butter to your sauce pot if you want to dip your fruit into it.
    2. For the eggy bread, whisk your egg and milk together in a bowl, then season with salt and pepper.
    3. Cut your bread into triangles and dip it into your eggy mixture, making sure that the bread is soaked through.
    4. Heat a frying pan on a medium heat and with your butter.
    5. When the butter starts to froth, add your bread to it and cook on each side for 1 minute, or until it's golden brown.
    6. Transfer into your snack box and enjoy!

4. Passionfruit yoghurt

Ingredients

    • 60g yoghurt - flavour of your choice

Method

    1. Scoop your yoghurt into your small food jar, the jar will keep it cold for up to 6 hours so you can take it on the go and eat later.
