As the colder months settle in, many of us get bored of eating cold lunches, craving warmth and comfort instead. This autumn, try our go-to recipes for a nourishing, warm meal no matter where you are.
Ramen noodles
Serves: 2
Ingredients
- 350ml chicken stock
- 2 garlic cloves crushed
- 2 tbsp soy sauce plus extra to season
- 0.5 tsp Worcestershire sauce
- thumb-sized piece of ginger sliced
- 170g ramen noodles
- 200g of chicken breast
- 1 tsp sesame oil
- 50g baby spinach
- 1 tsp sesame seeds
- Sliced spring onions
Method
- Mix your 350ml chicken stock, garlic gloves, soy sauce and ginger and 150ml of water into a large saucepan. Heat and simmer for 5 minutes.
- Cook your ramen noodles following the instructions on the pack, and then drain and set aside.
- Season and cook your chicken and set aside.
- Heat your food jars by adding boiling water, put the lid on and leave to sit for 10 minutes. Once heated, drain the water.
- Next mix your noodles with your stock, and add in your spinach.
- Divide between your Citron food jars and enjoy!
Lemon salmon with mash and garlic spinach
Serves: 1
Ingredients
- 1 piece of salmon
- 1.5 medium potatoes peeled and chopped
- 1 tbsp milk
- 1 tbsp salted butter
- A handful of spinach
- 1 clove of garlic
- 1 tbsp lemon juice
- 1 tsp garlic granules
- 1 tsp unsalted butter
- 1 tsp mustard
- Salt and pepper for seasoning
Method
- Boil your peeled and chopped potatoes in salted water, for around 10 minutes.
- Heat a pan up and cook your salmon for 2-3 minutes on one side, then 1-2 minutes on the other and set aside.
- Add your crushed garlic clove to the pan and then add your spinach until it has wilted.
- Once the potatoes are cooked, drain and start to mash them up. Add in your butter, milk and seasoning here too.
- For the sauce, melt your unsalted butter then add your lemon juice, garlic granules, mustard and seasoning together.
- Add it all to your heated food jar and drizzle your sauce on top.
Strawberry overnight oats
Serves: 1
Ingredients
- 100g oats
- 20g chia seeds
- 200 ml of strawberry yoghurt
- 100 ml milk of your choice
- 4 chopped strawberries
Method
- First you’re going to mix your yoghurt and milk together until it's combined.
- Next add your oats and chia seeds to the mixture and stir together. You can add in a few of your chopped up strawberries into the mixture.
- Spoon into your food jar, and pop in the fridge overnight.
